Spanish “Cauli” Rice Bowl

So many don't believe you can eat healthy, tasty food and feel great. The goal with the recipes shared on this blog is to provide access to simple, really delicious, and satisfying meals. NOT to deprive yourself! Working on reducing carbs to help stabilize your blood sugar, to reduce your response to insulin spikes, helps you feel great. Take your taste buds on a trip to Spain with this easy-to-make and delicious rice bowl! We shared this dish with our friends and family and many couldn’t even tell it wasn’t real rice!


Spanish “Cauli” Rice: Serves 4


INGREDIENTS:


  • 2 cloves garlic, chopped

  • 1 bay leaf

  • 2 tbsp fresh thyme

  • 2 tbsp green onion, scallion,or leeks, trimmed and minced

  • 4 cups cauliflower rice

  • ¼ tsp of saffron (optional)

  • ¼ tsp of cumin (optional)

  • 1 tsp paprika

  • 1/2 tsp turmeric

  • 1 cup diced tomatoes or 1/2 cup Rao’s Marinara sauce

  • 1 cups vegetable stock

  • 1/4 cup red bell pepper, chopped

  • 1/4 cup yellow bell pepper, chopped

  • 1/2 cup green beans

  • ¼ tsp each (or less) salt & pepper (Optional)

  • 1/4 cup of Fresh Cilantro or Parsley, chopped (Optional)

  • Cooking Spray

DIRECTIONS:

  1. Spray Pam to medium-hot skillet.

  2. Add garlic, thyme, and bay leaf. Cook for 30 seconds.

  3. Add onion, peppers and green beans. Cook for 1 min. stir.

  4. Add spices: saffron, cumin, turmeric, paprika, salt and pepper. Cook for 1 mins. Stir.

  5. Add tomato sauce. Stir.

  6. Add cauli-rice and vegetable stock. Stir. Simmer for 30 mins.

  7. Divide in 4 equal parts.

  8. Serve with fresh chopped cilantro/parsley.

Note: Be sure to add protein to complete this healthy meal. Top this rice bowl, with your favorite seasoned ground meat, to keep this meal simple. If you want to use lettuce for tacos instead of eating it as a rice bowl, remove the green beans to keep your meal balanced.

So many people think BROWN rice is healthier but it has the caloric equal to 10 teaspoons of sugar! Whereas, Cauliflower rice has only 5g of carbs with 3 being fiber. So cauliflower is a great healthy substitute for rice that doesn't create huge spikes in blood sugar.


Remember it's not about depriving yourself of delicious food, it's about being mindful of your choices, portion sizes, and coming up with healthier alternatives that are just as good if not better.
