Healthy Thai Crock Pot Chicken


This easy peasy and Crockpot Thai Chicken Recipe is healthy, tasty, & only takes one dish and five minutes to put together! 6 hours of cook time and you’ve got one yummy great weeknight meal for the whole family! After a few hours, your house will smell ridiculously good and you’ll get to enjoy this healthy crockpot Thai chicken and say so long unhealthy take-out!

Thai Crock Pot Chicken: Serves 4 INGREDIENTS:

  • 32 oz chicken breasts, raw - yields 24 oz cooked

  • 3/4 cup or 12 tbsp (6 oz) Salsa Verde

  • 2 tbsp PB2

  • 1 tbsp + 2 tsp low sodium soy sauce

  • 1/4 tsp ginger

  • 6 cups cauliflower cooked and grated


DIRECTIONS:

  • Place all ingredients in the crock pot, except cauliflower rice.

  • Stir to roughly mix the ingredients and make sure that the chicken is completely coated with the marinade.

  • Cook on low for 6 hours, no stirring.

  • To serve, divide chicken into 4 equal portions of 6 oz each over 1 1/2 cups of cauliflower rice per serving.

  • Stir sauce in crock pot and then spoon the sauce evenly over each portion.
