Great Way To Make Edible Halloween Theme Designs
We made a taco-Halloween Themed Dinner Party and used these Tortillas for making decorative thematic cut outs like Bat Chips for salsa or Jack-o-Lanterns for toppers for the taco meat crockpot. These low-carb, low-cal and gluten free tortillas will change your mind, if you thought healthier food was gross or boring! This recipe quickly became a new new go-to family favorite taco recipe for busy weeknight meals. No breading, no frying! Plus these taco shells are a great way to get the kiddos to eat healthy veggies!
INGREDIENTS: Severs 1 (multiple as needed)
2 tbsp liquid egg whites
1 cup riced cauliflower
1/2 cup reduced-fat shredded mozzarella cheese
1/8 tsp Mrs. Dash Southwest Chipotle Seasoning
DIRECTIONS: Baking the Tortillas
Heat oven to 425 degrees (No Bake not Broil!)
Line the bottom of a cookie sheet with parchment paper.
Put the egg whites, cauliflower, cheese, and seasonings in Ninja/blender cup. Pulse to make a slightly chunky mash, but NOT a total purée.
Spoon four even piles of batter on the paper, then spread evenly to make four thin, round, street sized tortillas. Be careful not to make any holes.
Bake at 425 degrees for approx 30 mins, or till the edges are browned.
Mold while hot before they cool (if desired) or cut into whatever shape you desire.

Jack-O-Lantern Stuffed Bell Peppers
This is a kid-friendly, low carb meal that’s fun and festive! This healthy, easy Halloween food features orange bell peppers stuffed with a comfort food. These stuffed peppers can fit into many specialty diet needs. In this recipe you can simply swap the rice out with cauliflower rice. You can buy pre-riced cauliflower in your local freezer section and cook based on instructions on the package. For the Healthier version of lean meat you can swap out the ground beef for another meat alternative like chicken or turkey. Or for vegetarians or vegans you can sap out the meat for tofu crumbles. The recipe is so easy and so versatile, just another reason to love peppers. And when you are trying to have the kids eat more veggies this is a great recipe because even if they don't eat the pepper itself there are veggies in the sauce or cauli-rice.
INGREDIENTS: Makes 2 Servings
2 Bell Peppers (any color - we used orange for Jack-o-Lanterns)
10.5 oz 93% lean ground meat, raw ~ need 7.5 oz cooked
For veg or vegan version use tofu crumbles instead of meat.
1/2 cup Rao's marinara sauce
For my daughter I used 1 tbsp low sodium taco seasoning & 1/4 cup water instead of the sauce so we had our Italian style and se had her's Mexican, you can flavor it as you like.
1/2 cup part skim mozzarella cheese, shredded
If making Mexican flavored use Mexican blend shredded cheese instead mozz.
1/4 cup fresh basil, chopped
If making Mexican flavored use chopped cilantro instead of basil
1 cup Cauliflower rice, cooked (Use cali-rice if they aren't going to eat the pepper or use tomato sauce, to make sure you get a balanced amount of veggies for a healthy meal)
2 tbsp fresh parmesan cheese (optional if you are making Italian flavor)

DIRECTIONS:
Preheat the over for 350 F
Prepare baking sheet with parchment paper
Cut a ring around the stem (keep the top with stem for later) then core and remove seeds from peppers.
Then cut jack-o-lanterns out of the exterior of the peppers, using a small paring knife.
Rinse and pat dry the peppers.
Arrange peppers without tops on the baking sheet and place in the oven for 10 to 15 min or until peppers start to get soft.
Meanwhile, cook ground meat in a medium sized skillet over medium high heat. When meat is almost cooked through, (If making Mexican flavored this is where you would add the water and the taco seasoning). Continue cooking until meat is fully cooked. drain any unwanted oil. If making Italian flavor -Stir in marinara sauce & almost all basil. (if adding the cooked cali-rice now is the time to do it). Set aside.
Scoop 1/2 of the meat mixture into each pepper and place back in the over to bake for 15 min.
Use shredded cheese divided evenly in half on top of each meat mixture within the peppers
Bake for an additional 5 min or until cheese has melted.
Remove from the oven, place the pepper tops back on the peppers.
Sprinkle with remaining basil or cilantro depending on the flavor you are making.
Serve each person a pepper.

Taco Seasoned Meat with a festive Tortilla Jack-O-Lantern Topper
INGREDIENTS: Serves 2
1 lb 95 to 97% lean ground meat (We used turkey)
Taco Seasoning Blend below or 1 Tbsp store bought low sodium Taco Seasoning:
1 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
1/4 tsp salt
1/2 tsp black pepper
Homemade Tortilla Recipe above cut into Jack-O-Lantern for topping
DIRECTIONS:
In a large skillet over medium heat, add meat and seasonings.
Cook and break up meat until cooked thoroughly about 6 to 7 min.
Drain meat of any excess fat.
Cut Homemade Tortilla Recipe above into Jack-O-Lantern, bake till crisp for topping

Crockpot Chicken Taco Soup - I added Tortillas from above making it Tortilla Soup
INGREDIENTS: Serves 2
2 cup Low Sodium Chicken Broth
2 cup Water
1 cup Rotel Diced Tomatoes w/ green chilies
1 tsp Reduced Sodium Taco Seasoning Mix (or the Taco Seasoning Blend above)
1/2 tsp Cumin
1/4 tsp Chili Powder
1 small Garlic Cloves minced
13-14 oz Boneless Skinless Chicken Breast
2 cup Green Cabbage chopped
2 cup Reduced-Fat Mexican Cheese Blend (I kept cheese out & let people add it)
Also made homemade tortillas from recipe above cut into strips and let dry & crisp & let people add if desired making it Tortilla Soup.
Also added optional cubed Avocado
DIRECTIONS:
Combine chicken broth, water, diced tomatoes, taco seasoning, cumin, chili powder, garlic, cabbage and chicken in a crockpot.
Cook on low for 6 to 8 hours or on high 3 to 4 hours.
Shred chicken breast in the crockpot before serving.
Pour soup into bowls/mugs and top with cheese (optional).
ENJOY!
Spider Taco Ring & Kooky Deviled Eggs
INGREDIENTS: Serves 2
1 lb 95 to 97% lean ground meat (We used turkey)
Taco Seasoning Blend (recipe above) or 1 Tbsp store bought low sodium Taco Seasoning
Tortilla ingredients from above
For eggs:
6 hard-boiled eggs, sliced in half lengthwise
2 Tbsp reduced-fat mayonnaise with olive oil
2 Tbsp nonfat or low-fat plain Greek yogurt
1 tsp Dijon mustard
1 tsp pickle juice
½ tsp Worcestershire sauce
¼ – ½ tsp Wasabi or hot sauce
1/8 tsp salt
1/8 tsp pepper
green food coloring (optional)
DIRECTIONS:
In a large skillet over medium heat, add meat and seasonings.
Cook and break up meat until cooked thoroughly about 6 to 7 min.
Drain meat of any excess fat.
Added any additional options that your crowd likes & diet allows stir to combine
Cut homemade tortillas (recipe above) into triangles and place overlapping in a ring on a sheet tray with parchment paper and fill with ring of taco meat and then cover with points of tortilla triangles & bake for 5-10 minute to brown as you desire. (I also shaped 8 spider legs made of raw tortilla mix on a sheet tray then baked as described in recipe above).
For Eggs:
Remove yolks from egg halves. In a medium-sized bowl, mix egg yolks and remaining ingredients until smooth.
Add Optional food color if desired, stir to combine.
Spoon or pipe egg yolk mixture into egg white shells.
ENJOY!
Chicken Dip with a Festive Fall Tortilla Scene Topper
INGREDIENTS: Serves 4
4 light spreadable cheese wedges, softened (laughing cow is what I use)
¼ cup plain, low-fat Greek yogurt
¼ cup light ranch dressing or Taco Seasoning Blend (recipe above) or 1 Tbsp store bought low sodium Taco (depending on the flavor you are going for)
¼ cup hot pepper sauce (Optional)
1,12.5-oz can chicken breast, drained (Used rotisserie chicken shredded & prefer it)
1 cup moderate-fat, shredded colby and monterey jack cheese (Or mexican blend)
4 Tbsp of reduced fat cream cheese
1 cup Rotel Diced Tomatoes w/ green chilies (optional)
Homemade Tortilla Recipe above for topping.
Cooking spray
DIRECTIONS:
Mix all dip ingredients until smooth, and transfer dip mixture to a lightly-greased (with cooking spray) crockpot.
Cook on low for 3 to 4 hours or on high 40 to 120 minutes, until lightly browned, hot and bubbling. I've also made in the oven at 400°F for 20-30 minutes.
Cut Homemade Tortilla Recipe above into fall scene (I did fence, tree, & pumpkins) , bake till crisp for topping
Kooky Chicken Fajitas
INGREDIENTS: Serves 6
27 oz. Raw chicken breasts
½ cup red bell pepper, sliced
½ cup orange bell pepper, sliced
½ cup yellow bell pepper, sliced
Cooking Spray
For the Marinade:
1Large resealable freezer bag
1 Tablespoon olive oil
2 teaspoon lime juice
1 clove garlic, minced (I used tubed garlic)
½ teaspoon chili powder
½ teaspoon cumin
½ teaspoon dried oregano
¼ teaspoon Mrs Dash Onion and Herb Seasoning (I've used season chopped onions)
½ teaspoon cayenne pepper (optional as it is hot/spicy)
2 Tablespoon cilantro, chopped
DIRECTIONS
For the Marinade: In a small bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, oregano, Mrs Dash, cayenne (if using) and cilantro. Set aside.
For the Chicken:
1.For the chicken breasts, if you purchased pre-sliced thin chicken cutlets then skip to the next step. If using chicken breasts, slice them longways into 2 even slices and firmly pound the chicken using the smooth side of a meat tenderizer to an even thickness of about ¼ inch. Slice Chicken cutlets and place into a large resealable freezer bag and pour marinade over top, making sure they are completely coated. Allow chicken to marinate for a minimum of one hour to overnight.
2.Once chicken has marinated, place peppers in lightly greased (with cooking spray) crock pot top with chicken, top chicken with remaining marinade in bag and cover and cook on HIGH heat about 2 - 3 hours or low heat 4 - 6 hours, until chicken has cooked through and veggies are tender.
3.Serve

Chicken Jack-O-Lantern Quesadillas
I used the Fajita recipe above but shredded the chicken and diced the peppers and added ¼ cup moderate-fat, shredded colby and monterey jack cheese (Or mexican blend) per quesadilla & optional 1 Tbsp of Rotel Diced Tomatoes w/ green chilies on 2 homemade tortillas (recipe above) one being cut like jack-o-lantern and warmed till cheese melted in a frying pan.
Lime Cilantro Cauli-Rice with a Festive Fall Tortilla Scene Topper
INGREDIENTS
3 cups riced Cauliflower (easily found in frozen section or can be made grating fresh cauliflower)
½ cup Fresh Cilantro Chopped
1 Lime (1 Tablespoon zest & 4 teaspoons juice)
2 Tablespoon Unsalted Butter (yes butter in moderation can be healthy, as a healthy fat)
½ teaspoons Mrs Dash Garlic Herb Seasoning
Homemade Tortilla Recipe above for topping.
DIRECTIONS
Brown the cauliflower rice (use directly from frozen or raw grated cauliflower): Heat the butter in a medium saucepan (with lid) on medium high heat. Add the cauli rice and stir to coat with butter. Cook, stirring occasionally, until the cauli rice has started to brown.
Add the garlic and cook a minute more.
Add the lime zest & Mrs dash, then simmer: Add lime zest & mrs dash to the cauli rice, stir, then cover and lower the heat to low for 2-3 minutes.
Add the lime juice, then simmer: pour lime juice to the cauli rice, stir, then cover on low for 2-3 minutes.
Then remove from heat and let sit for 10 minutes.
Stir in cilantro: toss cauli rice with chopped cilantro.
Put in a crock pot on warm and place homemade tortilla cut in fall scene and baked until crisp in the rice.

A healthy twist to the classic comfort food, recipe found here, except put base in crockpot and shaped mashed topping into cones and put black sesame seeds for eyes and mouth of ghosts.
Kooky Meatballs with Festive Fall Toothpicks
I used the meatballs from this recipe, and added sugar free BBQ sauce & toothpicks for looks.
Kooky Chicken Parm
I used this Chicken Parm recipe with sliced black olives as eyes.
Healthy Pizza Ghosts
Used this healthy pizza recipe, ghost cookie cutters, something black for the eye (black olives, sesame seeds, edible black pen, whole black peppercorns, etc.)
Pesto Pasta Frankenstein Salad
If your dietary needs allow for gluten free pasta (or pasta alternative), this dish with pesto, slice of hard boiled egg, sliced olives, pickle, and peppers and if desired a little extra green food coloring.
Pucking Kabocha with Guacamole
INGREDIENTS: Serves 8
2 avocados
¼ cup lime juice
2 cloves of garlic, minced
1 cup chopped tomato
1 tsp. sea salt
1/2 tsp. dill
DIRECTIONS:
1. Spoon out avocados into large bowl.
2. Add lime juice, minced garlic, and chopped tomato.
3. With a spoon, mash together until mixture becomes creamy.
4. Add sea salt and dill. Refrigerate and serve with coming out of carved Kabocha

Pucking Pumpkin with Salsa
This Fresh Salsa Recipe is a cinch to make, contains no additives or preservatives and tastes so much better than jarred salsa at a fraction of the cost.
INGREDIENTS: Serves 4
1 Tbsp lime juice, divided
1 ½ cups diced tomato
¼ cup diced green bell pepper
¼ cup chopped red onion
¼ cup chopped cilantro
¼ teaspoon ground cumin
¼ teaspoon ground paprika
1 chopped and deseeded jalapeno pepper
DIRECTIONS: Stir the diced tomatoes, green bell pepper, onion, cilantro, cumin, paprika, jalapeno pepper, and lime juice in a medium bowl. Optional step: You can pulse with food processor a few time until desired texture is reached. Store in covered container in the fridge.
Pumpkin Shaped Cauliflower Hummus with Celery Stem
Lighter on carbs and calories than traditional hummus, but it wasn’t short on taste or texture!
INGREDIENTS: Serves 8
1/2 head cauliflower (1 to 1 1/2 lbs.), trimmed & cut into 2-in. florets (about 4 cups florets)
3 1/2 tablespoons extra-virgin olive oil
1 tsp. smoked paprika
2 teaspoons kosher salt, divided
1/2 teaspoon ground cumin
1/4 teaspoon red chile flakes
2 garlic cloves, smashed and peeled
2 tbsp. lemon juice
3 1/2 tablespoons well-stirred tahini
DIRECTIONS:
1. Combine the cauliflower, water, 1 1/2 tsp olive oil 1 tsp salt and 1 whole garlic cloves to a microwave safe dish. Microwave for about 15 minutes - or until softened and darkened in color. 2. Put the cauliflower mixture into a magic bullet, blender, or food processor and blend. Add the tahini paste, lemon juice,cumin, red chile flakes, 1 raw garlic cloves,2 tsp olive oil, and 1 tsp kosher salt. Blend until mostly smooth. 3. To serve, place the hummus in a bowl and serve with celery as top stem.
