Craving comfort food, but don't want to feel guilty it's not healthy? This creamy garlic spaghetti squash casserole is so saucy and delicious that it just hits the spot! You won’t even notice the spaghetti squash isn’t real noodles! This recipe is great to make ahead of time and freeze this casserole, and then pop it in the oven to reheat when you are in need of an already made meal.
Creamy Chicken Spaghetti Squash Casserole: Serves 4
INGREDIENTS:
2 cups cooked spaghetti squash
2 cups cups broccoli florets
4.92 oz. fresh sliced mushrooms
12 oz. cooked shredded chicken
1 1/4 cup light Bertillo Alfredo sauce
1 teaspoon ranch powder
1 1/2 cups 2% cottage cheese
1 cup low fat mixed cheese
Cooking Spray (Pam)
DIRECTIONS:
Preheat oven to 350.
Spray a casserole 9x12 dish with non stick spray.
Mix everything together in a bowl except the shredded cheese; reserve that for the top.
Put in mixture in casserole dish and spread evenly.
Top with the 1 cup low fat mixed shredded cheese.
Bake till bubbling approximately 30 minutes.
Divide into 4 servings and serve (Pictured here with scallions as garnish).
