Healthy Cheesy "Rice"

Cheesy Zucchini & Cauliflower: Makes 2 servings INGREDIENTS: 1 cup cauliflower rice 2 cups chicken broth 1 tablespoon butter ¾ pound zucchini, grated (I used my food processor but a cheese grater would work well, too) 1 cup shredded sharp cheddar 1/2 teaspoon garlic powder ¼ tsp salt ½ tsp pepper, to taste DIRECTIONS: Add grated cauliflower and chicken broth to a pan, bring to a boil, turn heat to low, and cover. Cook, covered, for 15 - 20 minutes or until cauliflower is tender. Remove from the heat and add the butter, grated zucchini, cheddar, and garlic powder. Stir until well incorporated. Cover and let sit for 5 minutes. Stir again and add salt and pepper. Add the protein of your choice to make a complete meal.


Be sure to add more protein to complete this healthy dish; For example 3 oz of cooked chicken would complete this healthy meal.
