Healthy Apple Cinnamon Protein Doughnuts

As most of America becomes Homeschoolers, so many of us are looking for Simple, Creative, Healthy ideas for our kids to get in proper nutrition during these uncertain times. My daughter Olivia has Hashimoto's and feels her best when she has a Gluten Free, Dairy Free diet. That said she's a picky eater and at that age where she is very influenced by others and the desire to fit in. So have perfected this recipe over the last couple of years... you know the type of recipe where the first batch is gone before the second batch finishes cooking. Olivia calls this recipe: OLIVIA'S SECRET DONUT RECIPE! These healthy protein apple cinnamon doughnuts are great for breakfast: Gluten Free, dairy free.... brain food!!!


INGREDIENTS:


  • 2 cups flour (we used a mix of almond flour, coconut flour, amaranth flour, and flaxseed meal- to make gluten free)

  • 1tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp ground cloves

  • 4 tbsp protein power (We use chocolate kids-MVP from purium)

  • 1 tsp baking soda

  • 1 tsp backing powder

  • 1/2 cup sugar (we use coconut sugar, we have also used it with no sugar and more syrup)

  • 1 cup applesauce

  • 2 eggs

  • 1/2 cup milk (we use coconut milk powder & water or cashew milk - to make it dairy free)

  • 1 tsp vanilla

  • 1 tbsp maple syrup (we used sugar free syrup or coconut nectar)


DIRECTIONS:


  • Combine all ingredients listed in a bowl.

  • Mold into doughnut form pans or it also work as little balls - doughnut holes bake at 400 degrees for 14-16 minutes or in a doughmaker (until toothpick inserted comes out clean our takes about 7 minutes I flip after 7 minutes for best results).

  • Dip baked doughnuts in 2 tbsp melted butter (you can use vegan butter if you’d need it 100% dairy free)

  • Then cover with cinnamon and sugar (we eat them plan (need the butter to stick) but you can also use cinnamon and truvia).
