GRILLED CHICKEN MARGHERITA




Love Fresh Tomato Recipes During Harvest Time. From garden to table, this dish is a true crowd pleaser.


GRILLED CHICKEN MARGHERITA: Serves 4 This super easy, Grilled Chicken Margherita is incredibly tasty and is ready in less than 30 minutes! Start with savory herb chicken and top it with melty mozzarella cheese, pesto, and tomato basil garnish for a rave-worthy, quick and simple weeknight dinner.

INGREDIENTS

  • 4 boneless skinless chicken breasts (1.75 lbs), pounded to less than 1 inch thickness

  • 1/4 teaspoon salt (OPTIONAL)

  • 1/4 teaspoon pepper

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning (or 1/2 tsp oregano, 1/4 tsp basil, 1/4 tsp thyme)

  • 4 slices mozzarella cheese (4 oz)

  • 1/2 cup basil pesto (try 5 Minute Pesto)

  • 1/2 cup cherry tomatoes, halved (or chopped tomatoes)

  • 1 tablespoon fresh lemon juice

  • 1/2 cup packed basil leaves, very thinly sliced

  • Cooking Spray

INSTRUCTIONS

  • In a large bowl combine chicken, salt and pepper, olive oil, garlic power, and Italian seasoning. Toss to combine.

  • Grill chicken over medium-high heat for about 6-8 minutes on each side until cooked through.

  • Top each piece of chicken with a slice of mozzarella cheese and cook another minute or so until melted.

  • Toss tomatoes, lemon juice, and basil together.

  • Top each chicken breast with about 3 tablespoons pesto, and a scoop of tomatoes.

  • Serve immediately.

Remember to add veggies to complete this meal. I have also cubed the chicken and stuffed zucchini boats with this chicken margharita filling to complete this healthy meal, or put the chicken dish on top of zoodles fresh from the garden.
