It's truly amazing. Here is how you make it!


Grilled Argentine Steak With Chimichurri: Makes 4 servings


INGREDIENTS:

  • 1 cup arugula leaves (Optional use of half arugula and half cilantro)

  • 1/2 cup fresh flat-leaf parsley leaves

  • 2 tablespoons chopped shallot

  • 2 teaspoons fresh lemon juice

  • 2 tablespoons extra-virgin olive oil

  • 1/4 teaspoon crushed red pepper

  • 1 garlic clove

  • 1/2 teaspoon kosher salt, divided (half for Chimichurri & half for Steak marinade)

  • Cooking spray

  • 2 lbs raw beef tri-tip or sirloin steak (look for 2– to 3–inch-thick cuts) which should yield 20 oz cooked beef)

  • 2 teaspoons canola oil

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon paprika

DIRECTIONS:

  • Warm up the grill for indirect moderate heat: If using a charcoal grill, bank the coals to one side; if using a gas grill, ignite the burners on one side.

  • Combine the last 3 ingredients and 1/4 teaspoon salt together in a ziplock bag.

  • Insert the steak into the bag and rub the marinade over the steak and set aside.

  • Coat grill rack with cooking spray.

  • Place the steak on the cool side of the grill and cook until it reaches an internal temperature of 110 degrees F, about 25 minutes.

  • As the meat cooks, combine the chimichurri ingredients: Place first 7 ingredients and 1/4 teaspoon salt in the bowl of a mini food processor; process until smooth.

  • Move the steak to the hot side of the grill and cook on each side until lightly charred, about two minutes per side. (This technique of cooking first and searing second is called a reverse sear.)

  • Remove steak from the grill and let it rest for 10 minutes before slicing against the grain.

  • Serve with drizzle of sauce.

Don't forget to add more veggies to complete this healthy meal. Normally since the grill is going we skewer 6 cups of other veggies like mushrooms, summer squash/zucchini, sliced bell peppers and or cherry tomatoes and grill them at the same time to make this a complete healthy meal!
